THE FACES BEHIND SUMO

The Sumo Sushi & Bento concept restaurants were launched in 2000 by entrepreneurs with a dream of creating the first Japanese casual dining restaurant in the UAE. Rooted in their Japanese and multi-cultural backgrounds, where they grew up surrounded by diverse cultures with rich histories that valued family, food and the bonds made around the dining experience. They fused together their love for family, food, quality time and service to create Sumo Sushi & Bento from the ground up.

Starting with one simple location, Sumo Sushi & Bento has now become an international franchise.

Combining the diverse and creative menu with the relaxed, upbeat and family friendly atmosphere, Sumo’s loyal fan base continues to grow worldwide. Some of the most loyal patrons have become franchisees and Sumo has been there to support them through every step. The brand continues to grow and launch new innovative ways that franchisees can participate in this innovative Japanese restaurant concept.

OUR CHEFS

Sumo is on the cutting edge of innovative new recipes as our head Chefs continue to create fun, flavorful fusion dishes where East meets West.

Chef Teerapan Rinthaisong (Chef Tako)

Chef Tako began his career as a sushi chef over 20 years ago. He has a passion for cooking and Japanese cuisine in particular. He learned his trade under a highly experienced Japanese chef at Sushi Tsukiji in Bangkok (which specializes in top-end sashimi and sushi dishes) where he worked for eight years.

He joined the Sumo team in 2000 and was one of the company’s first employees. Over the last 15 years he has developed a winning menu that is uniquely appealing to the UAE palate; a challenging role considering the number of cultures and communities in the Emirates.

Chef Glenn Sebastian Lacandalo

Chef Glenn fulfilled his lifelong dream of becoming a professional chef in 2008 when he joined Sumo Sushi & Bento in Dubai. He was previously working as a corporate finance executive, where his ambitions were undernourished. Since starting at Sumo he has risen rapidly through the ranks. He is now one of the company’s head chefs and is known for his inventive creations as much as and his strengths in managing the corporate kitchen.

He is a valued member of several international chef associations, including the Research Chefs Association, and has a passion for Molecular Gastronomy. He believes that by bringing contemporary techniques to the traditional art of sushi he can produce magical and unique dishes befitting the UAE's young and adventurous tastes.

Sumo Sushi & Bento is looking to advance his 'research' and to showcase some of his latest creations.
